Preheat the oven to 180°C. Grease a 35 x 20cm cake tin with non-stick spray and line with baking paper.
1. Sift the dry ingredients together in a large mixing bowl.
2. Whisk the wet ingredients together and pour into the dry ingredients. Using a large ball whisk, slowly whisk until the batter is smooth. Pour the batter into the pre-pared tin and bake for 20-25 minutes or until a skewer inserted in the middle comes out clean. Leave to cool for 10 minutes then turn out on a wire rack to cool completely. Repeat to make a second cake.
