BACON AND EGG PIZZA
Pizza for breakfast? Well, why not! This is perfect for a weekend brunch with family or friends. Follow the same basic recipe and add your choice of toppings to make pizzas for family movie night.
TIP To make two medium pizzas, halve the dough before shaping the bases. For individual pizzas, divide the dough into four and use two baking sheets.
SEAFOOD PAELLA
A traditional paella pan is wide and shallow, to allow the ingredients to cook evenly and take on all the lovely flavours.
TIP Put the frozen seafood mix into a colander and run under cold water for 1 minute to remove any ice crystals. Leave to drain for a few minutes before adding to the pan.
MY FAVOURITE HOT-AND-CRISPY WINGS
Crispy, spicy chicken wings are perfect for a weekend lunch. Serve them with your favourite dipping sauce and a side of fries. Make plenty because everyone will come back for more!
TIP When the oil is hot enough for deep-frying, carefully lower 3-4 wings into the pot and fry until golden and cooked through.
STICKY PORK RIBS
For this recipe, you need fresh belly ribs from the butcher (not the marinated, pre-cooked ribs sold in supermarkets). Belly ribs are also known as St Louis-style ribs, after the US city where they originated.
TIP To check for doneness, use tongs to lift up one end of a rack of ribs (bone side up). When the rack bends easily and the meat in the middle begins to tear apart, the ribs are done.
ROASTED CHICKEN LEG QUARTERS WITH PECAN, SAGE AND GARLIC STUFFING
The nuts, sage, rosemary, garlic and lemon-herb seasoning make this dish a flavourful dinner option.
TIP For a smooth gravy, sieve the mixture before serving.
BEEF STEW
To soak up all the lovely juices, serve this with rice; steamed bread straight out of the pan; or a fresh, crusty loaf.
TIP Try something different: instead of Worcestershire sauce, substitute the same amount of soy sauce, Marmite or Bovril.
