For this recipe, Reuben prefers quinces because growing up, his mom’s baked quinces with custard was a favourite. But pears work just as well – slice the pears or roast them whole.

Preheat the oven to 200°C.

1. Slice the quinces or pears and put the slices in the lemon water to prevent discolouring.
