Potatoes are often just an added veggie when it comes to stew but it’s the star ingredient in this one. We serve the curry on roasted cabbage instead of rice.

1 Stew Heat the oil in a pot and toast the mustard seeds until they start popping. Add the rest of the spices and stir-fry for a few seconds.

2 Add the ginger and stir-fry until fragrant, then add the stew base and bring to the boil.
