These are the best brownies ever. I have made these countless times for friends, as birthday gifts or for a new mom. You can turn them into mega brownies by simply adding a topping of your choice halfway through baking. Keep a stash in your freezer to delight unexpected guests, or on standby for a special occasion or just a midweek pick-me-up.

Preheat the oven to 160°C fan, gas mark 4. Line a baking tin, about 30 x 23 x 4cm, with nonstick baking paper.

1. Place the eggs and sugar in a large bowl and whisk with an electric hand mixer, or in a stand mixer, until pale, thick and a ribbon of mixture falling from the whisk or mixer attachment holds its shape. This usually takes a good 5-10 minutes using an electric hand mixer.
