Preheat the oven to 200°C. Grease 2 large baking sheets with a little oil.
1 Mix the diced brinjal, salt and oil well and arrange on one of the baking sheets. Roast for 20-25 minutes, or until the brinjal is soft and cooked. Allow to cool slightly.
2 Frikkadels Place the brinjal in a mixing bowl with the rest of the ingredients and mix well. Shape the mixture into walnut-sized balls and arrange on a plate. Cool for 30 minutes.
