1 Salad Mix the rice, peppers, onion, cucumber slices and apricots/peaches in a large bowl.
2 Curry mayonnaise Fry the onion in a little oil until soft. Mix in the curry powder and cumin, then remove from the heat and mix in the yoghurt, mayonnaise and sugar (if using).
3 Add the curry mayonnaise to the rice mixture and mix well.
