My love for guavas comes from my gogo in Umlazi. She had a big guava tree in her yard, which was a real joy for me growing up. That tree gave us shade from the humidity and heat of Durban, and delicious fruit that we picked ourselves, some of which my granny canned in sweet vanilla syrup. This dessert captures the scent of Durban summers for me.

1. Chia base In a bowl, whisk together all the ingredients for the chia base. Cover with clingfilm and leave in the fridge overnight to thicken.

2. Banana-avo layer Blend together the avo, banana, lemon juice and milk until smooth. Spoon into a bowl, cover with clingfilm and set aside.
