
- 500ml - all-purpose flour
- 2,5ml - ground cinnamon
- 5ml - baking powder
- 5ml - bicarbonate of soda
- - pinch of salt
- 3 - large very ripe bananas
- 100g - butter, melted and cooled, plus extra for greasing
- 2 - large eggs
- 250ml - brown sugar
- 60ml - buttermilk
- 5ml - vanilla extract
- 125ml - semi-sweet chocolate chips
Preheat the oven to 175°C. Grease a standard-sized loaf pan (18cmx9cm) and set aside.
1 In a large bowl, whisk together the flour, cinnamon, baking powder, bicarbonate of soda and salt.
2 In a small bowl, mash the bananas with a fork until completely smooth.
3 In another large bowl, use an electric beater to cream the melted butter, eggs and brown sugar until light and fluffy. Add the buttermilk, vanilla extract and mashed bananas. Beat until smooth and well-combined.
4 Fold the dry ingredients into the wet ingredients and mix until just combined – do not over mix.
5 Fold in the chocolate chips. Transfer the batter to the greased loaf pan and place in the oven. Bake for 50 minutes, or until a skewer inserted into the centre comes out clean.
6 Remove from the oven and transfer to a wire rack to cool before removing the bread from the pan. Slice and serve.
