This stir-fry has lots of veggies and lean chicken breast fillets. We serve it with low- GI basmati rice for a healthier option.

1. Mix the cornflour, soy sauce and egg white and dip the chicken strips in the mixture.

2. Fry the chicken in batches in oil until just done, don’t overcook. Remove from the pan and season with salt.
