1 Mustard Use a food processor to pulp the fruit until smooth.

2 Transfer to a saucepan, then add the apple cider vinegar, sugar, spices and lemon zest and heat until the sugar has dissolved. Lower the heat and simmer until it starts to thicken – about 20 minutes.

3 Remove the whole spices, add the Dijon mustard and stir through. Transfer the mixture to a food processor and pulse until smooth. Store in an airtight glass bottle or jar.
