Slice the fillets into thick portions and flatten each one a bit using the heel of your hand. Season well with salt and pepper, then roll in the flour. 

2 Whisk the eggs and milk. Dip the pork pieces in the egg mixture one by one, then roll in the coconut. Arrange on a plate, cover and chill for 30 minutes.
