1 Heat the oil in a saucepan and fry the onion, garlic and ginger for a minute. 

2 Add the spices and stir-fry until fragrant. 

3 Arrange the chicken in the saucepan, turn the heat down, then add the coconut milk. Sprinkle the coriander over and simmer on medium heat for 15 minutes, stirring occasionally to keep the chicken from burning.
