This combination is nice for when you're looking for a light meal.

Preheat the oven to 180°C. Grease a large baking sheet with nonstick spray.

1. Brinjal Mix the brinjal, olive oil, coriander and cumin together. Spread out on the prepared baking sheet and season with salt and freshly ground pepper.
