Veggies and goodness all in one fritter. These fritters can keep in the fridge for up to a week.
1. Beat the eggs and milk together in a jug and set aside. In a large bowl, mix the corn kernels, sweet potato, spinach, ham and garlic.
2. Add the milk mixture and mix through. Sprinkle the flour and salt over and mix. Leave to stand for 30 minutes.
