1 Fry the cauliflower and onion in the olive oil until soft but still firm. Add the ginger, apple, masala and cumin and stir-fry for about 3 minutes.

2 Add the vegetable stock and milk and bring to the boil. Remove from the heat.

3 Transfer to a food processer and pulse until smooth.
