Preheat the oven to 180°C. Line two large baking sheets with baking paper and grease with non-stick spray.

1. Put the butter in a large mixing bowl and use an electric whisk to beat until creamy. Add the sugar and whisk until light, then whisk in the eggs one at a time.

2. Sift the flour, bicarb and salt over the butter mixture. Add the coconut and stir until mixed.
