Keep a tart dish and a piping bag handy.
1. Biscuit layer Mix the coffee, cocoa powder, brandy (if using), hot water and sugar until well combined. Dip the biscuits in the coffee mixture one by one, allowing it to absorb the liquid. Lay the biscuits side-to-side in the bottom of the tart dish.
2. Cream layer Whip the cream until stiff and set aside.
