The salad makes for a tasty starter.

1. Put the fennel slices on a serving platter. Mix the lemon juice and zest with the garlic and half the olive oil. Sprinkle dressing over.

2. Heat the rest of the oil in a pan and fry the halloumi until golden brown (you can also dip the halloumi in a bit of cake flour before frying).
