We only use mutton tripe cubes, but you’re welcome to add any other offal.

1 Tripe Put the tripe, cloves, bay leaf and salt in a pressure cooker and cover with water. Seal the lid well and bring to the boil. Cook under pressure for 35-40 minutes or until the tripe is soft. Drain the liquid and set aside.

2 Curry Heat the oil in a pot, then add the cinnamon, cumin seeds, masala and turmeric. Stir-fry for 30 seconds until fragrant.
