1 Put the dates in a glass mixing bowl and sprinkle the bicarbonate of soda over. Add the hot water and heat in the microwave for 1 minute. Leave to cool. 

2 Pulse the Tennis biscuits into crumbs in a food processor then remove them. 

3 Put the dates and the rest of the ingredients – apart from the coconut for rolling – in the food processor and pulse until well blended.
