We finish gnocchi with spiced crispy potato skins – a delicious and affordable alternative to grated Italian cheese.
1 Peel the potatoes and put the peels in a bowl filled with salted water (for later use). Halve the potatoes and place in a pot. Cover with water and cook until done. Drain in a colander and dry steam for 10 minutes.
2 Mash the potatoes and set aside to cool.
