Make one or all four flavours. The guacamole can be frozen in airtight plastic containers to be enjoyed later if you like. Just drizzle a little oil over the surface before you seal the containers and freeze for up to a month. To serve, defrost overnight in the fridge then stir well with a fork.

Makes 500-625ml (2-2½c) guacamole
