1. Sift the flour, baking powder and salt together, then stir in the sugar. In a separate bowl, mix the milk, eggs and oil then add to the flour mixture. Beat until smooth. Leave to stand for 30 minutes.

2. Crumble the ricotta or feta into the mixture, then add the lemon zest and stir well.
