This salad is quick and easy, and a Banter’s delight! You can also use broccoli instead of cauliflower.

Preheat the oven to 180°C.

1. Place the cauliflower in a large mixing bowl, drizzle with olive oil, season with salt and pepper, and toss to coat. Spread out the prepared cauliflower evenly on a baking sheet and roast for about 20 minutes. Remove from the oven and leave to cool for a few minutes, then transfer to a large salad bowl.
