The pears are poached in rooibos syrup, then included in the malva pudding, a SA favourite. To save time, you can use canned pears.

Preheat the oven to 170°C. Grease a large bread tin or a 20cm cake tin with nonstick spray.

1. Pears Put all the ingredients apart from the pears in a pot. Bring to the boil, then add the pears. Turn down the heat and simmer for 10 minutes. Remove the pears from the liquid and set aside to cool (keep the liquid for later use).
