The nutty flavour in the dressing adds an interesting flavour twist to this firm favourite.
1. Dressing Cover the cashew nuts in water and soak for 10 minutes. Transfer to the bowl of a food processor, add the mustard and lemon and pulse until finely chopped. Add more water if necessary to make a liquid.
2. Salad Mix all the ingredients apart from the bean sprouts. Stir the dressing in and finish by sprinkling the bean sprouts over.
