Thyme and pears make for an interesting flavour combination. These tarts can be dessert or even served as part of a cheese board.

Preheat the oven to 200°C. Line a large baking sheet with baking paper and grease with nonstick spray. Keep a 10cm circular cookie cutter handy.

1. Lightly roll out the pastry on a flour-sprinkled surface. Use the cookie cutter to cut 8-10 circles from the pastry and transfer these to the prepared baking sheet.
