
Pickled pumpkin.

Ingredients
- 375ml - apple cider vinegar
- 250ml - water
- 220g - white sugar
- 1,25g - black peppercorns
- 2 - star anise
- 1 - bay leaf
- 5ml - brown mustard seeds
- 1kg - butternut pumpkin, peeled, sliced thinly
Method
1 Place the vinegar, water, sugar and spices in a large saucepan over medium heat. Cook, stirring occasionally, for 5 minutes or until sugar dissolves.
2 Add the pumpkin, increase heat to high and bring just below boiling point. Reduce the heat to low-medium and simmer for 15 minutes or until the pumpkin is just tender.
3 Ladle the mixture into hot sterilised jars and seal while hot.
