You’ll need a pressure cooker. Make a fire with enough coals for braaiing and put a stand in the coals. Put a braai grid on the stand.

1. Ribs Put the onion and bay leaves in the pres­sure cooker. Add the ribs and pour the tea and stock over.

2. Add water to ensure the ribs are completely submerged. Secure the lid, bring to the boil and cook under pressure for 20 minutes. Let the steam escape from the lid and carefully open.
