1 Spice mixture Toast the cumin and coriander seeds in a dry pan until fragrant. Use a mortar and pestle to crush coarsely then mix with the paprika, pepper, salt and sugar.
2 Butter mixture Mix the ingredients well.
3 Chicken Rub the garlic and salt all over the chicken. Carefully loosen the skin over the breast meat and stuff the butter mixture under the skin. Sprinkle the spice mixture liberally over the outside of the chicken.
