You should always keep a jar of tomato passata in your food cupboard – then this dish takes almost no time at all.
1. Slowly heat the oil in a pan, add the garlic and continue to heat slowly until the oil is well infused with the garlic, then remove the garlic pieces.
2. Add the passata and chopped tomatoes to and cook over medium heat until the mixture thickens into a sauce – about 20 minutes. Season with salt, pepper and oregano.
