1. Season the steaks on both sides with salt and freshly ground pepper.

2. Crumb coating Mix the breadcrumbs and rosemary well.

3. Roll the steaks one by one in the flour, dip in the whisked egg, then roll in the breadcrumbs. Arrange the steaks in a single layer on a plate and chill in the fridge for at least 30 minutes.
