This recipe has been requested often on social media. A popular American dish, it’s made with a variety of seafood and lots of butter, although I’ve reduced the butter in this version. Feel free to use any seafood that’s available to you. This is essentially a two-step dish: first, boiling the seafood and vegetables, then making the sauce. I assure you it’s well worth the effort!

1. Place the potatoes in a large pot with the water. Bring to the boil and cook for 5 minutes to soften slightly.

2. Remove from the heat and add the spices and herbs, stock and sweetcorn. Return to heat and cook for 5 minutes.
