Broccoli can even be braaied over the coals! The chakalaka butter adds extra zing to these kebabs.

Keep a few metal kebab skewers handy. Make a fire with enough coals for braaiing. Put a metal stand in the coals and keep a braai grid handy.

1. Chakalaka butter Heat the oil and fry the onion until soft. Add the garlic, chillies and spices and stir-fry until fragrant. Remove and set aside to cool completely.
