1. Boil, steam or microwave the spinach until just wilted; then drain. Squeeze out excess moisture and drain on paper towel. Chop the spinach coarsely and spread out on paper towel. 

2. Heat the oil in a small frying pan. Cook the brown onion and garlic, stirring until onion is soft. Stir in the nutmeg and cook until fragrant. Combine the onion mixture and spinach in a large bowl with the feta, lemon rind, herbs and green onion. 

3. Preheat the oven to 180°C/160° fan and grease two oven trays.
