Preheat the oven to 190°C. Grease a large baking sheet with nonstick spray.
1. Put the mushrooms in a dry pan – no oil needed, as the mushrooms create their own moisture. Stir-fry until soft, add the soy sauce and mix through. Add the spinach and heat until the spinach wilts. Season with salt and pepper, then set aside.
2. Beat the cottage cheese and eggs together until well combined, add the cheddar cheese and mix well. Then add the spinach mixture.
