Ice cream bars make an ideal summer dessert or sweet treat. Vary the flavour by using other fruit or berries instead of the strawberries.

Line a 25cm rectangular ovenproof dish or baking tin with baking paper and grease with nonstick spray.

1. Crust Mix the biscuits, lemon zest and butter well and press onto the base of the prepared dish or baking tin.
