1 Put the onion, garlic, red pepper, cucumber and celery in a food processor and pulse until finely chopped.

2 Add the rest of the ingredients and pulse until almost smooth – it should still have a slightly chunky texture.

3 Refrigerate until serving, then serve in glasses with celery sticks as garnish.
