Grease a baking sheet with nonstick spray.
1. Chicken Rub the spice mix all over the chicken, then transfer to a marinating dish. Drizzle the olive oil and lemon juice over. Cover and leave to marinate in the fridge for 2 hours.
2. Preheat the oven to 200°C. Arrange the chicken on the prepared baking sheet and roast for 20-25 minutes or until cooked. Leave to cool, then shred.
