Buying a really good artisanal ciabatta loaf is one of the key aspects to the success of this simple recipe. Your end results will only be as good as the bread you start with.

1. Mix the butter, herbs and garlic in a small bowl, then season generously with salt and pepper. Use a sharp bread knife to slice the loaf, not cutting all the way through to the bottom. Spread the slices generously on both sides with the butter mixture. The back of a teaspoon works better than a knife when trying to get in there.
