Grease a 24 x 10cm silicone mould with nonstick spray.

1. Pour 45ml water over the gelatin and leave to sponge.

2. Put the sugar, cream of tartar and water in a saucepan over medium heat. Stir continuously until the sugar has dissolved. Simmer for 10 minutes, then remove from the heat. Leave to cool for 30 minutes.
