Preheat the oven to 200°C. Grease a large baking sheet with olive oil.
1. Brinjals Arrange the brinjal slices in a single layer on the prepared baking sheet. Drizzle the oil over and season with salt and pepper. Roast for 20 minutes or until the brinjals are soft.
2. Sauce Put all the ingredients in a saucepan and heat until the sauce starts to boil. Turn the heat down and simmer slowly for 10 minutes. Season with salt and pepper.
