Yellow rice

1. Heat the butter in a saucepan and fry the onion until soft. Add the spices and chillies (if using) and stir-fry until fragrant.

2. Add the rice and stir-fry for one minute. Add the stock and enough hot water to cover the rice. Simmer slowly until the rice is soft and has  absorbed all the liquid  – add hot water as needed. Season with salt.
