
- 4 - large brinjals, sliced
- 45ml - olive oil
- - salt and pepper
- 15ml - olive oil
- 1 - onion, chopped
- 3 - garlic cloves, chopped
- 1can - chopped tomatoes
- 10ml - sugar
- 2ml - ground cinnamon
- 2ml - ground allspice
- - salt and pepper
- 500ml - cooked rice
- 10g - fresh parsley, chopped
- 1 - garlic clove, chopped
- 60ml - sunflower seeds, toasted
- - grated zest of 1 lemon
This delicious budget recipe is not only tasty but it's a feast for the eye.
Preheat the oven to 200 °C. Grease a baking sheet and an ovenproof dish with nonstick spray.
1. Arrange the brinjal slices on the baking sheet, pour the oil over and season with salt and pepper. Roast for 15 minutes or until done.
Tomato sauce
2. Heat the oil and fry the onion and garlic. Add the rest of the ingredients and simmer for 5 minutes.
Rice
3. Mix the ingredients.
4. Spread half the sauce on the base of the ovenproof dish and arrange half the brinjals in the dish. Spread half the rice over, followed by more brinjals, the last of the rice, the last of the brinjals and the remaining sauce. Bake for 15-20 minutes.
