Alfredo Pasta Rice with Streaky Bacon


This creamy one-pan Alfredo pasta rice with mushrooms and crispy bacon is an easy and tasty dish that’s perfect for a quick midweek dinner!


200g Eskort Rindless Streaky Bacon, sliced into squares

45ml (3T) thyme, chopped

750ml (3c) mushrooms, chopped

1 garlic clove, chopped

olive oil for cooking

500ml (2c) pasta rice

125ml (½c) leeks, chopped

500ml (2c) vegetable stock

500ml (2c) water

250ml (1c) cream

125ml (½c) Parmesan cheese, grated

salt and freshly ground pepper

olive oil for cooking


  • In a frying pan over moderate heat, fry the bacon, thyme, mushrooms and garlic in olive oil until the bacon is golden.
  • Add the pasta rice and fry for 1 minute.
  • Add the stock, water and cream. Stir through and allow to simmer for 10 minutes. Season with salt and pepper.
  • Serve the pasta rice topped with grated Parmesan cheese and extra crispy streaky bacon, if desired.
