Chicken sausages & roasted peppers with chilli pumpkin mash

A quick and easy dinner that doesn’t compromise on flavour

Serves 4 | Preparation: 10 Min | Cooking: 15 Min    


350g Eskort Chicken Sausage

2 red peppers

olive oil

30ml (2T) fresh thyme

15ml (1T) smoked paprika

1 litre (4c) pumpkin, cooked

15ml (1T) butter

15ml (1T) sriracha sauce

salt and freshly ground black pepper

cooked mashed potato

60ml (¼c) sour cream


  • Preheat the oven to 180°C.
  • Quarter the red peppers and place them on a baking sheet with the sausages. Drizzle with olive oil and sprinkle over the thyme and smoked paprika. Bake for 10 minutes.
  • Mash the pumpkin with the butter and sriracha sauce and season with salt and freshly ground pepper.
  • Serve the sausages and peppers on the mashed potato with a spoonful of sour cream.
