Eskort marinated loin ribs with whole roasted sweet potato salad

2kg Eskort Marinated Loin Ribs

4 sweet potatoes cut into wedges

2T chopped chives

2T chopped basil

2t chopped parsley

60ml (¼c) sundried tomatoes, chopped

zest  of 1 lemon

45ml (3T) avocado oil


  • Braai your ribs for 10 min on each side, turning them every 5 min and basting with the sauce in the packet.
  • Braai the sweet potatoes for 15-20 min or until cooked through.
  • While the ribs and sweet potatoes are on the braai, combine the herbs, sundried tomatoes, and lemon zest with the avo oil.
  • As soon as the sweet potatoes come off the fire combine them with the herb mixture in the bowl.
  • Serve the sweet potato salad with the ribs.
