375g Eskort Peppadew® Pepper & Feta Pork Sausages
200g vine or cherry tomatoes
125ml (½c) red onions, chopped
15ml (1T) thyme
30ml (2T) cooking oil
560ml (2¼c) flour
3ml (½t) salt
187ml (¾c) milk
- Preheat oven to 200°C.
- Place sausages, tomatoes, onions, thyme and oil in an oven dish and bake for 15 minutes.
- While the sausages are in the oven, combine flour and salt in a mixing bowl and make a well in the middle.
- Break eggs into the well and mix with an electric mixer until smooth.
- Add milk and mix.
- Pour the batter over the cooked sausages and bake for another 20 minutes.
- Serve with a fresh salad and smooth cheese.
