Baked bbq rasher & spicy cheese rolls with maple and brandy dip


A sweet, buttery maple and brandy dip makes this #JustDelicious rasher roll worth a try!


BBQ Rasher & Spicy Cheese Rolls

2 packs Eskort BBQ Rashers

6 hot dog rolls

500ml (2c) grated cheese

250ml (1c) onion marmalade

1 red chilli, finely chopped

125ml (½c) leeks, finely sliced

Maple and brandy dip

250ml (1c) beef stock

30ml (2T) maple syrup

30ml (2T) brandy

60ml (¼c) butter


  • Preheat the oven to 190°C.
  • Place the rashers on a greased baking sheet and bake for 10 minutes.
  • Slice the rolls in half lengthwise and place the bottom halves on a baking sheet.
  • Combine the cheese, onion marmalade, chilli and leeks in a mixing bowl.
  • Spread the bottom halves of the rolls with the cheese mixture then top each half with a BBQ rasher.
  • Close with the top halves and bake for 15 minutes.

Maple and brandy dip

  • Add the stock, maple syrup and brandy to a frying pan over medium heat.
  • Allow to reduce until sticky then add the butter and whisk until smooth.
  • Serve the rolls with a side of maple and brandy dip.
